Using Chocolate as a Superfood: Choose Raw!
Chocolate is the new ‘Black’. Its making waves in all the health circles, as its health benefits appeal to medical and health practitioners with diverse educations and specialties. Laboratory studies reveal its potent anti-oxidant actions, and ‘chocolate parties’ reveal a great many other positive effects. We’ve all seen the surveys where many women would prefer chocolate over sex (this does not seem to be the case in European countries, however); add to this the results of an Italian study mentioning that women who eat chocolate have more sex, and the subject gets a little spicy. Spicy enough even to consider adding a healthy dose of chocolate to your life? Need more reasons? Chocolate makes your bones more dense, it prevents heart disease, its thought to attract abundance, and its full of mood-boosting and intelligence-boosting neurotransmitter precursors. Healthy, wealthy, wise and happy. So it is as easy and eating all the Hershey’s bars you can get a hold of? Well, not quite…
It happens that the somewhat controversial ‘raw foodists’ are right on the mark with this one: it’s raw, unroasted, unprocessed chocolate that’s the real health food. Really, it’s not even called chocolate, but Cacao — chocolate is the name for the roasted, fat and sugar added product that Willy Wonka makes. (But for the fun of it, we’ll keep calling it chocolate. In the long run, it’s cool to think you’ve added ‘eating chocolate’ to the list of things you do daily that are good for you.) One needs to be careful, too, as raw chocolate is relatively hard to come by. Pricey organic hot cocoa is still roasted and alkalized, changing chocolate’s chemistry significantly enough to warrant limiting its intake. You can get raw chocolate online, and it’s slowly finding its way onto store shelves. Make sure it says ‘raw’ or ‘cacao’ (pronounce ‘Ka-’, as in cat, ‘cow’) and not ‘cocoa’, and should have no other ingredients (though some actual raw chocolate ‘candy’ can be found in very hip health food stores). Got it? If you still need a little convincing, here’s a quick look at the difference between raw and processed chocolates to help you make the switch — then on to a few recipes.
First the question of Caffeine. Many folks are sensitive to caffeine’s effect on their nervous system. It raises blood pressure, shortens tempers and keeps people awake. And we all know chocolate has caffeine in it, right? But what form is it in? Research done by homeopaths indicates a significant difference on the stimulating effects of chocolate depending on whether it’s been heated or not. A drink made with roasted chocolate evoked excitement of the nervous system that did not occur with unroasted chocolate. Alteration of chemical structures through heat is common, and occurs in the case of chocolate. The roasting process involves heating the beans between 250 and 350 degrees F for 30 minutes to 2 hours. Anecdotal reports of individuals moving from coffee or yerba mate as their morning drink to a cup of hot chocolate report gentle stimulating effects without anxiety, as their other drinks had produced. Even very sensitive people who do not do well with any form of caffeine report positive results with raw chocolate; nothing at all like the effects produced by coffee or caffeinated teas.
Next the question of anti-oxidants. Chocolate has been discovered to have exceptionally high quantities of important polyphenols. A study published in the Journal of Agriculture and Food Chemistry was titled: “Cocoa Has More Phenolic Phytochemicals and Higher Antioxidant Capacity than Teas and Red Wine.” It’s hard to argue with that. Here again the question of raw arises: One report notes that while roasted chocolate is made up of five-percent antioxidants, raw chocolate contains twice as much at ten percent. Another important note is the addition of milk to make milk chocolate. Research has shown that the addition of milk actually cancels-out the positive effects of chocolate’s antioxidants. And milk may be one of the reasons many people seem to be allergic to chocolate, as lactose intolerance is fairly common. Another chocolate myth is some individuals break out when ingesting high amounts; reports indicate that raw chocolate does not cause this response, and that it may be the refined fats and sugars present in most chocolate products producing this effect.
Finally, the question of mood-enhancing neurochemicals and precursors. Chocolate contains significant quantities of the essential amino acid tryptophan. Tryptophan intake has recently been collated with neurogenesis, the development of new brain cells, and both long and short term memory. The presence of tryptophan is critical for the production of serotonin, a primary neurotransmitter associated with mood (Prozac works on the principal of enhancing the action of serotonin). Once in the body tryptophan reacts with vitamins B6 and B3 in the presence of magnesium (all present in raw chocolate) to produce serotonin. Enhanced serotonin function assists in diminishing anxiety and stress – ccording to Dr. Gabriel Cousens, serotonin is literally our “stress-defense shield.” Tryptophan is heat sensitive and is often deficient in many cooked-food diets, even when animal protein intake is high. In addition to tryptophan (but not heat sensitive) chocolate also contains PEA, the ‘love hormone’ and Anandamide the ‘bliss chemical’.
Convinced? Ready for a little raw chocolate power? First its critical to find a good source; make sure the chocolate you’re buying is raw – it’s most often labeled as ‘Cacao’, the name for the raw chocolate beans and the tree on which they grow. Cacao nibs are small pieces of pure raw chocolate that can be eaten straight, or mixed with other healthy snacks like dried fruits. But the best-loved raw chocolate preparation is the original chocolate drink: hot chocolate. Now it won’t be hot enough for long enough to convert any chemicals or to cook the chocolate, just to make it a warm comforting drink – and of course, heating the water isn’t necessary at all (though in recipes calling for Coconut oil, it helps to blend the oil into the drink). So to make a cup, use powdered raw chocolate (grinding the nibs or beans in a coffee grinder can work, though you’ll find this challenging as the natural oils in the chocolate will heat up and liquefy before the grinding is complete, leaving little crunchy bits). Put one or two tablespoons powdered chocolate, one to two teaspoons raw dark agave nectar (a low-glycemic index natural sweetner) and one to two teaspoons of Coconut oil in a blender. Add eight to twelve ounces almost-boiling water and blend for ten seconds. That’s it! You’ll find your personal favorite formula after a few preparations – more or less chocolate, oil, sweetener or water.
There are lots and lots of recipes out there, and great reading on raw chocolate’s health benefits and preparation. You’ll cacao powder often combined with other super nutritious foods in smoothies and good-for-you deserts. Natural organic candies start with the same ingredients as the drinks, but without the liquid. Just make a paste, adding pecans, coconut shavings or whatever you like, and chill to harden. As you’re not baking anything, there’s little to go awry, and really, so many possibilities. By using raw chocolate, you’ll open up a whole new world of cooking for yourself and your family — and if you hadn’t before, you might just find yourself really motivated to treat yourself to natural health and wellness.
In addition to aromatherapy, you might consider using flower essences and remedies during this time of year. Rescue Remedy also known as the Five Flower Formula make excellent additions to any home care kit.
Gift Baskets: Great Treats for Any Occasion
Most of the popular and appreciated gifts in the world come in a basket.
Gift baskets are a hit during every holiday, as people give them to their relatives, peers, office mates, and business contacts.
Every gift basket comes as a package consisting of several food or non-food items neatly wrapped in cellophane or just topped with a nice ribbon. In fact, a lot of people would love to receive a bunch of smaller gifts than just one larger gift.
When it comes to choosing a gift basket, the possibilities are just endless. Baskets filled with gifts are usually themed, the most popular of which are fruit baskets, snack baskets, and those filled with bath and spa products such as lotions and scented soaps.
Much too often, many occasions call for a celebration and of course, gift giving. You always find yourself racking up your brains just to come up with a perfect gift ides. Fortunately, you can give away gift baskets that suit almost every occasion such as anniversaries, weddings, birthdays, Yuletide parties, baby showers, housewarmings, and Valentine’s Day.
Even if there’s no occasion to celebrate, it still makes sense to give a gift basket when a situation or circumstance calls for it. If you know someone who’s recuperating from a disease, giving a get well gift basket is a thoughtful gesture. If you want to say “thank you” to your customers or clients, you can do so by sending out gift baskets. And if you want to congratulate someone for a job well done, you can fill a basket with stuff a person likes and then send it to him.
Some baskets can be personalized to suit the interests or hobbies of the recipient. For example, you can fill a basket with sporty stuff such as baseball caps and shirts for a baseball fan. A chocolate lover would definitely drool over a basket full of different choco bars, cookies, and candies.
Gift baskets come in three types: pre-made, created in-store, and homemade. If you are in a hurry, it is convenient to order a pre-made gift basket. If you want a more personalized basket, your best bet is an online gift basket store that gives you a variety of options on what to include in your basket before you place your order. Lastly, a homemade gift basket gives you full control over the contents of the basket, but you have to be skilled enough to be able to make your gift look presentable.

Chocolate Fountains For An Awesome Chocolate Fondue
Chocolate fondue is elegantly served in chocolate fountains. The structure of a chocolate “waterfall” is made from tiers of metal stacked one on top of the other over a heating basin. The warmth in the basin keeps the chocolate liquid. A central cylinder with a rotating helical flighting moves the liquid chocolate up the fountain. The chocolate then flows down to the tiers where they’ll be used to dip food items like bananas, strawberries, marshmallows in.
Pure chocolate can solidify into chunks as it’s moved along the chocolate fountain. Such a tendency will clog up the central cylinder of the fountain. To ensure consistency of flow, couverture chocolate, a chocolate by-product which is high in cocoa butter is mixed with the fondue. Generally vegetable oil is used to supplement the action of cocoa butter. Since the addition of oily substances spoil the taste of the chocolate somewhat, there are chocolate brands that are created particularly for fountains. These brands have a a lot of-reduced viscosity.
Alternative substances are used to prevent the chocolate from clogging as a result of of its sugar content, such as; chocolate syrups and dark chocolate that is 70% chocolate.

The Candies of the Holidays – Chocolates
When most of us think of chocolate we know that while it may be fun to eat, that it can also make us fatter than we are today. Chocolate is not considered a food that you should eat while you’re dieting as it’s usually rich in sugar and calories. Surprisingly, though, dark chocolate is a different story. Most people don’t know about the many health benefits of dark chocolate and they should because it can prove to be a blessed addition to any weight loss process. Yes, I said weight loss.
At the very beginning of its history, chocolate was sugar free. The Mayas and Aztecs drank unsweetened cocoa drinks for over 500 years. It was a luxury reserved for the elite and it was all unsweetened. The Europeans, however, found they desired a richer taste. Two thousand years later, it seems we are headed back where we began. With the problem of obesity growing worse every day and so many people suffering from diabetes, many people are beginning to turn to sugarless chocolate as a desirable alternative to the fat and calories in the regular form. Diabetics also need a version that is safe for them to eat.
You are right in believing that chocolate makes you feel better when you are down. Eating it causes the brain to release endorphins, a chemical that makes us feel good. Everyone likes the little lift that it can give, even those that are watching their sugar intake. Sugarless chocolate makes it possible.
Some interesting studies have been done that seem to indicate that dark chocolate can also lower high blood pressure. You certainly don’t want to substitute an aspirin for a chocolate bar, but chocolate has been suggested to reduce the bad cholesterol in our bodies, which is effectively good for the heart.
Virtually any kind of regular chocolate you can think of can be found in a sugar free version. Milk, dark and white can all be found in a sugar free form. Most any sweet treat can be made with sugar free chocolate.
Sugar free products for baking are available for those who want to try their hand at home baking. Sugarless versions of favorite candies are now carried by many drug stores, supermarkets and candy stores. Quality does vary, however. The kind you pick up at the drug store may indeed taste quite different than that made by a quality, experienced candy maker.

Holiday Treats: Chocolate Cookie Recipe
Every treat called a cookie is not what we would usually view as a cookie. Several are added extras to our cookies that taste very good (like Butterfinger pieces), whereas others formulate the fundamental shape or size of cookies but do not feature the traditional ingredients of a cookie the least bit. An enjoyable chocolate cookie recipe is not really a cookie, but tastes fantastic and is an outstanding substitute for conventional turtle cookies.
For a very tasty recipe, you need only three very simple ingredients that may already be in your kitchen. You simply need to find pretzel twists or rings, chocolate kisses (caramel chocolate work best), and some pecans that are halved.
Get things going by preheating the oven to about 300 degrees, a little higher if you are doing several sheets since you will be opening the door frequently. Lay the pretzels flat on the non-stick cookie sheet, and add a kiss on the top of each pretzel.
Bake until the chocolate is soft, but not completely melted. Finally, take the pan from the oven and add the pecan halves on top of the soft chocolate.
There are a wide variety of Hershey’s kisses and types of nuts that work well with this recipe, and it is a fun way to create a different type of treat on your holiday goodie platter. Mix and match your favorites, or create new combinations of treats that suit your individual palate.
These are a type of turtle cookies, and one bag of kisses will create about eight cookies give or take. This will really go a long way at a party, but it may be a smart idea to have some backup cookies in case your platter needs a refill during the party. Keep from snacking on the kisses, and you will be good to go.
