Years ago dinnerware was made out of porcelain, and porcelain was invented by, you guessed it, the Chinese, over 1000 years ago. It was probably invented by the Tang Dynasty, but for some reason the emperors of the Song Dynasty seem to get the most credit for it. Around 1100 AD (about 1/2 way through the Song Dynasty), the art and skill of porcelain making was being circulated throughout the East. By the time 1400 AD had rolled around, this art form had migrated all the way to Europe.
Years ago, importing fine dinnerware from China was a very expensive proposition. Due to this expense, only the very wealthy could afford to own it. The remedy this situation, the Europeans started to create their own “China Factories”. They modified the process a bit by incorporating some different clays and other materials. This resulted in a softer China, one that was to have a duller tone than those similar products that were being imported from China. Around 1700 we see another form of China starting to emerge onto the scene. It was called “Bone China”, a name resulting from the fact it was a mixture of both porcelain clays and “bone ash”.
Today, most of our valuable and yes collectable dinnerware is made from pottery, not porcelain. It’s sometimes called “earthenware”, and it was extremely popular during the decades of the 1950’s and 1960’s.
What’s the most widely used pottery today? Stoneware is the answer. If you look around it seems to be everywhere. Check out the stores, the restaurants, the hotels and various homes. It’s all around us. Stoneware is made by firing the item at a very high temperature until it’s completely solid, and can therefore hold liquids. The process to create Stoneware was developed in the same place as the process for creating porcelain…China, about 3500 years ago. b) Soup makes a great addition to a meal. If you are planning on having soup, the soup bowl goes directly on top of the dinner plate. The soup spoon goes to the right of the spoon that you positioned during the basics.
c) Bread and butter and salad knifes are the next items to go down. They should be positioned directly to the left of the forks. Butter plates, if you have them, go directly above the dinner plate. Butter knives go on top of the butter plate.
d) The cup and saucer come next. Put them directly above the spoons. The handle of the cup should point towards the right. Wine or water glasses go to the left of the coffee cup.
Formal Dinner Settings
The formal dinner setting is the most elaborate setting of all, but there is nothing to worry about…we will explain all the steps to you. You merely need to follow the guidelines for an informal dinner setting, and build upon it. Here is the additional information you need:
a) If you are planning on serving both red and white wine, you will need two wine glasses…one for each type. They go next to the water glasses that you have already positioned.
b) Beverage, soup, or dessert spoons should be placed to the immediate right of the knife. Alternately, they can be brought to the table when the soup or dessert is served.
c) A centerpiece not only looks nice, it is a great conversation piece. If you can’t find an appropriate one, you could always create one (if you are artistic that is).

That way the ice will last longer and you will not be tempted to have to swig it down before the ice melts. If you are having friends around, go one step further and put the bottle in the freezer. It will not go solid. You can even cut the top off a plastic cola bottle, put the bottle of gin or vodka in that, fill it with water and then freeze it. Remove the plastic bottle and you have an attractive “collar of ice” around your bottle.
The Last Tot – five minutes or so after finishing a bottle of spirits, tip it out one more time and the bottle that you thought was drained will deliver one more tot of contents. It is not a lot, but it is a pleasant free surprise. The same works for many alcohol based products including underarm roll-on and scent.
White Wine – white wines taste best when they have been gently chilled over a prolonged length of time, but if you get taken by surprise visitors, put the bottle of wine in a container of ice and cold water. Try not to have to put it in the deep freeze, it is too severe, but if you have to, then ten minutes is all that it takes.
Port – it is always better to decant port and older, heavier red wines, because of the sediment that may be in the bottom of the bottle, which tastes horrible and because it aids the aeration of the wine. However, it is not always easy to see when the dregs are coming. The manuals say to use a candle, but they were written a hundred years ago. The concentrated beam from a torch is far better. Try using a Durabeam because its rotateable head allows it to be directed more accurately.
Decanters – sometimes the stopper becomes stuck fast. Tap it with another glass item and it should come loose. If not, run the neck of the decanter under hot water for a few seconds and it will come out.
Labels – if you store your wine in a damp place where the labels are likely to rot or fall off, spray them with hair lacquer beforehand.
